Yam Preparation

Boil the Yam

Peel the yam and cut it into thick slices. Place the yam slices in a large pot.

Add Water and Salt

Pour in 4 cups of water and add 1 tsp of salt. Make sure the water covers the yam slices.

Cook the Yam

Bring the water to a boil over medium heat. Reduce the heat and let it simmer for 20-25 minutes, or until the yam is tender when pierced with a fork.

Drain and Press

Once cooked, drain the yam slices and let them cool for a few minutes. Using a flat surface or a clean plate, press the yam slices down until flattened.

Green Shito Sauce

Prepare the Ingredients

Chop the green bell pepper, Scotch bonnet pepper, garlic, onion, and, if using, the smoked fish into small pieces.

Heat the Oil

In a frying pan, heat 4 tablespoons of vegetable oil over medium heat.

Sauté the Vegetables

Add the chopped onion and garlic to the pan. Sauté for about 2-3 minutes until fragrant and translucent.

Add Peppers and Salt

Stir in the chopped green bell pepper, Scotch bonnet pepper, and 1 tsp of salt. Cook for another 5 minutes, stirring occasionally.

Incorporate Crayfish and Fish

Add 2 tablespoons of ground crayfish and the smoked fish (if using). Mix well and cook for another 3-5 minutes until all ingredients are well combined.
