Preparation

Prepare the Apples

Wash and core the fresh apples, then chop them into small pieces.

Cook the Mixture

In a large pot, combine the chopped apples, water, brown sugar, lemon juice, and cinnamon sticks. Heat on medium until the mixture starts to simmer.

Simmer

Reduce the heat and let the mixture simmer for about 30 minutes, stirring occasionally to ensure the sugar dissolves and the apples soften.

Fermentation

Strain the Mixture

After simmering, strain the mixture through a fine mesh sieve or cheesecloth into a clean fermentation vessel, discarding the solids.

Add Yeast and Nutrient

Cool the strained liquid to room temperature, then add the champagne yeast and yeast nutrient. Stir gently to combine.

Ferment

Seal the fermentation vessel with an airlock and set it in a dark, cool place for about 1 to 2 weeks, or until fermentation slows down.

Carbonation

Prepare for Bottling

Once fermentation is complete, dissolve the priming sugar in a small amount of boiling water and let it cool.

Bottle the Cider

Add the priming sugar solution to the fermented cider, then transfer the cider into clean bottles, leaving some headspace.

Cap the Bottles

Cap the bottles and store them at room temperature for about 1 to 2 weeks for carbonation.
