Method

Cooking the Risotto

1

Prepare the Base

In a medium saucepan, bring the vegetable broth to a gentle simmer over low heat. In a separate large pot, heat the olive oil over medium heat. Add the chopped shallots and garlic, sautéing until translucent, about 3-4 minutes.

2

Add the Arborio Rice

Stir in the Arborio rice and cook for 2-3 minutes, allowing the rice to toast slightly, stirring frequently.

3

Deglaze with Wine

Pour in the dry white wine, stirring until it is mostly absorbed by the rice.

4

Incorporate Broth

Begin adding the warm vegetable broth one ladle at a time, stirring continuously and allowing each addition to be absorbed before adding the next. This process should take about 18-20 minutes.

Adding Vegetables and Finishing Touches

5

Add Vegetables

When the rice is al dente and creamy, stir in the asparagus, zucchini, and cherry tomatoes. Cook for an additional 5-7 minutes until the vegetables are tender.

6

Season the Risotto

Mix in the chopped fresh thyme, salt, and black pepper. Adjust seasoning to taste.

7

Final Touch

Remove the pot from heat and fold in the grated Parmesan cheese and lemon zest. Stir until creamy and well combined.
