Chill glass

Place a coupe or large Nick & Nora glass in the freezer for a few minutes or fill it with ice water while you prepare the cocktail to ensure the finished drink is cold.

Build and shake

Add the Fid Street Gin (2 oz), hibiscus syrup (0.5 oz), fresh lime juice (0.5 oz), fresh grapefruit juice (0.25 oz), and 2 dashes of orange bitters into a cocktail shaker filled with ice. Shake vigorously for about 10–15 seconds until well chilled and slightly diluted.

Strain

Empty the ice or water from the chilled coupe. Double-strain the shaken mixture into the chilled coupe to remove fine ice shards and any pulp.

Top with bubbles

Carefully top the cocktail with 3 oz of well-chilled Taittinger Champagne (or other dry sparkling wine). Pour slowly down the side of the glass to preserve effervescence.

Finish and garnish

Gently express a thin grapefruit twist over the surface of the drink to release oils, then rest the twist on the rim or float it in the glass. Add one dehydrated or fresh hibiscus flower on the surface for aroma and visual appeal.

Serve

Serve immediately while the Champagne is lively. Optionally provide a small stirring pick for a guest who prefers a bit more integration between syrup and bubbles.
