Method
Marinating the Chicken
Prepare Marinade
In a mixing bowl, combine lime juice, olive oil, chili powder, garlic powder, salt, and black pepper. Whisk until well blended.
Marinate Chicken
Place the chicken breasts in a large resealable plastic bag or bowl. Pour the marinade over the chicken, ensuring all pieces are well-coated. Seal the bag or cover the bowl and refrigerate for at least 30 minutes, preferably 2 hours.
Making Guacamole
Prepare Ingredients
Halve the avocados, remove the pit, and scoop the flesh into a mixing bowl. Finely chop the red onion and tomato, and chop the cilantro.
Grilling Chicken
Preheat Grill
Preheat your grill to medium-high heat (about 375°F to 400°F).
Grill Chicken
Remove the chicken from the marinade, letting any excess drip off. Place the chicken on the grill and cook for about 6-8 minutes per side, or until the internal temperature reaches 165°F (75°C).
Rest Chicken
Once cooked, remove the chicken from the grill and let it rest for 5 minutes before slicing.
Assembling the Bandito Pollo
Layer Ingredients
On a serving plate or in a wrap, layer the sliced grilled chicken, guacamole, shredded sharp cheddar, shredded Monterey Jack, diced tomato, and drizzle with Bandito sauce.
