Ancho 'Shrooms Preparation

Rehydrate Ancho Chili

Soak the dried ancho chilies in warm water for about 20 minutes until softened. Remove seeds and stems, then blend with a little soaking water until smooth.

Cook Mushrooms

In a skillet, heat olive oil over medium heat. Add minced garlic and sauté for 1 minute. Add sliced mushrooms, cumin powder, salt, and black pepper. Stir and cook until mushrooms are tender and browned, about 5-7 minutes.

Combine with Chili Paste

Stir the rehydrated ancho chili paste into the mushrooms, mixing well. Cook for another 2-3 minutes to let the flavors meld.

Blend Cashews

In a blender, combine soaked cashews, nutritional yeast, lemon juice, garlic powder, salt, and water. Blend until smooth and creamy, adding more water if needed to reach desired consistency.

Poblano Pepper Pico Preparation

Combine Ingredients

In a bowl, mix diced poblano peppers, tomato, red onion, chopped cilantro, lime juice, and salt. Stir well and let sit for 10 minutes to allow the flavors to develop.

Spicy Vegan Chili-Lime Broth Preparation

Prepare Broth

In a large pot, combine vegetable broth, lime juice, chili powder, cumin powder, salt, black pepper, and red pepper flakes. Bring to a boil, then lower heat and simmer for 15 minutes.

Assembly

Serve

In a bowl, serve the ancho 'shrooms, drizzle with strange trip cheez(ish) dip, and top with poblano pepper pico. Ladle the spicy vegan chili-lime broth around the dish. Garnish with lime wedges and fresh cilantro if desired.
