Preparation of Seafood

Curing the Fish

In a large bowl, combine the fresh fish, lime juice, and salt. Make sure the fish is completely submerged in the lime juice. Cover and refrigerate for about 20-30 minutes until the fish is opaque.

Preparing the Shrimp

In a separate pot, bring water to a boil. Add the shrimp with head and cook for about 3-4 minutes until they turn pink. Remove the shrimp, let them cool, and then peel and devein them. Chop into bite-sized pieces.

Adding Cooked Shrimp

Add the cooked shrimp into the bowl with the cured fish and lime juice.

Adding Tuna

Cut the tuna into small cubes and add to the mixture, gently folding to combine.

Vegetable and Fruit Preparation

Chop Vegetables and Fruits

Finely chop the red onion, cucumber, serrano chile, and tomato. Dice the mango into small pieces. Add all these chopped ingredients to the seafood mixture.

Final Assembly

Combine and Adjust Seasoning

Stir the mixture gently to combine all ingredients. Adjust seasoning with crushed pepper and additional salt to taste. Mix well.

Serve

Serve the ceviche mitotero chilled, preferably in a bowl or glass, and enjoy with tortilla chips or alone.
