Method

Prepare the Shrimp

1

Marinate the Shrimp

In a bowl, combine the peeled and deveined shrimp with lime juice, garlic powder, salt, and black pepper. Toss well to coat. Cover and let marinate in the refrigerator for at least 30 minutes.

Make the Batter

2

Combine Dry Ingredients

In a mixing bowl, whisk together the all-purpose flour, cornstarch, baking powder, and salt until well combined.

3

Add Sparkling Water

Gradually add the cold sparkling water to the dry mixture, whisking until a smooth batter forms. The batter should be thick but pourable.

Fry the Shrimp

4

Heat Oil

In a deep skillet or frying pan, heat enough oil over medium-high heat for frying (about 2 inches deep).

5

Coat and Fry Shrimp

Once the oil is hot, dip each marinated shrimp into the batter, allowing excess to drip off. Carefully place the shrimp in the hot oil and fry until golden brown and crispy, about 2-3 minutes on each side. Remove with a slotted spoon and drain on paper towels.

Assemble the Tacos

6

Warm the Tortillas

In a dry skillet, warm the corn tortillas over medium heat for about 30 seconds on each side until pliable.

7

Build the Tacos

To assemble, place a few pieces of fried shrimp on each tortilla. Top with shredded cabbage, a dollop of sour cream, and sprinkle with chopped cilantro. Add hot sauce to taste.
