Dough Preparation

Make the Dough

In a mixing bowl, combine the all-purpose flour and salt. Add the softened butter and mix until crumbly.

Add Wet Ingredients

In a separate bowl, whisk together the egg yolk and cold water. Gradually add this mixture to the flour mixture, stirring until a dough forms.

Knead the Dough

Turn the dough onto a floured surface and knead for about 5 minutes until smooth. Cover with plastic wrap and let it rest for at least 30 minutes.

Cook the Vegetables

In a skillet, heat olive oil over medium heat. Add the chopped onion, bell pepper, and minced garlic. Sauté for about 5 minutes until softened.

Add Tuna and Seasoning

Stir in the drained tuna, diced tomato, salt, black pepper, cumin, and chopped cilantro. Cook for another 5 minutes, stirring occasionally. Remove from heat and let it cool.

Assembling and Baking

Roll Out the Dough

After the dough has rested, divide it into 8 equal pieces. Roll each piece out into a circle about 6 inches in diameter.

Fill the Empanadas

Place a spoonful of the tuna filling in the center of each dough circle. Fold the dough over to create a half-moon shape and crimp the edges to seal.

Bake the Empanadas

Preheat the oven to 375°F (190°C). Place the empanadas on a baking sheet lined with parchment paper. Bake for 20-25 minutes, or until golden brown.

Serving

Prepare the Plate

On a serving plate, arrange fresh lettuce leaves as a bed. Place the baked empanadas on top and garnish with green salsa.
