Preparation
Cook the Sausage
In a large pot, heat 1 tablespoon of olive oil over medium heat. Remove the casing from the Italian sausage and crumble it into the pot. Cook until browned, about 5-7 minutes. Remove the sausage from the pot and set aside.
Cooking
Sauté Onion and Garlic
In the same pot, add another tablespoon of olive oil if needed. Add chopped onion and sauté until translucent, about 3-4 minutes. Add minced garlic and cook for an additional 1 minute.
Add Tomatoes and Broth
Stir in the canned diced tomatoes (with their juice) and chicken broth. Bring the mixture to a boil.
Add Rice
Once boiling, add the white rice, dried oregano, salt, and black pepper. Reduce heat to low and cover the pot. Simmer for 15 minutes.
Add Sausage and Spinach
After 15 minutes, stir in the browned sausage and fresh spinach. Cook for an additional 5 minutes, until the spinach is wilted.
Serving
Serve the Soup
Ladle the sausage soup into bowls and enjoy hot. Optionally, garnish with grated Parmesan cheese.
