Preparation

Season the Steak

Generously season both sides of the bone-in filet mignon with kosher salt and freshly ground black pepper. Allow the steak to sit at room temperature for about 30 minutes to let the seasoning penetrate and the meat to warm slightly.

Preheat the Oven

Preheat your oven to 400°F (200°C) to ensure it is hot enough for roasting the steak.

Sear the Steak

In a large oven-safe skillet, heat the olive oil over medium-high heat. Once the oil is shimmering, carefully add the seasoned filet mignon. Sear for about 3-4 minutes on each side until a golden-brown crust forms.

Add Aromatics (Optional)

If using, add the fresh rosemary sprigs and crushed garlic cloves to the skillet during the last minute of searing for added flavor.

Roast in the Oven

Transfer the skillet to the preheated oven. Roast the filet mignon for about 10-12 minutes for medium-rare, or until the internal temperature reaches 130°F (54°C). Adjust the roasting time according to your preferred doneness.

Rest the Steak

Once cooked to your desired doneness, remove the skillet from the oven and transfer the steaks to a cutting board. Cover loosely with aluminum foil and let them rest for 5-10 minutes to allow the juices to redistribute.
