Peel and Chop Potatoes

Peel the Russet potatoes and cut them into uniform chunks, about 1-2 inches in size.

Prepare Garlic

Peel the garlic cloves and set aside.

Cooking

Boil the Potatoes

Place the chopped potatoes in a large pot and cover them with cold water. Add 1 teaspoon of salt and bring to a boil over high heat. Once boiling, reduce the heat to medium and cook for about 15-20 minutes or until the potatoes are fork-tender.

Cook the Garlic

In a small saucepan, add the peeled garlic cloves and cover them with water. Bring to a boil, then reduce the heat and let simmer for about 10 minutes until soft. Drain and set aside.

Drain and Mash

Once the potatoes are cooked, drain them in a colander. Return the potatoes to the pot and add the cooked garlic. Use a potato masher or ricer to mash the potatoes and garlic together until smooth.

Add Dairy and Seasoning

To the mashed potatoes, add the unsalted butter, whole milk, and sour cream. Mix until fully incorporated and creamy. Season with salt and black pepper to taste.

Finely chop the chives and sprinkle them over the mashed potatoes for garnish. Serve warm.
