Make the Vanilla Bean Gelato

In a saucepan, combine the milk, heavy cream, and sugar. Split the vanilla bean lengthwise and scrape the seeds into the mixture, adding the pod as well. Heat over medium heat until the mixture is warm but not boiling.

In a separate bowl, whisk the egg yolks until smooth. Gradually add about a cup of the warm milk mixture to the yolks, whisking constantly to temper the eggs. Pour the egg yolk mixture back into the saucepan.

Cook over low heat, stirring constantly, until the mixture thickens and coats the back of a spoon. Remove from heat and strain through a fine-mesh sieve to remove the vanilla pod and any cooked egg bits.

Chill the mixture in the refrigerator for at least 4 hours or overnight. Once chilled, churn the mixture in an ice cream maker according to the manufacturer's instructions. Transfer to a container and freeze until firm.
