Prepare the Mussels

Rinse the mussels under cold water, scrubbing the shells to remove any dirt. Remove any beards by pulling them away from the shell.

Cook the Base

In a large pot, melt the butter over medium heat. Add minced garlic and sauté for about 1 minute until fragrant.

Add Ale and Seasonings

Pour in the ale and stir in the Dijon mustard and thyme leaves. Season with salt and black pepper to taste.

Steam the Mussels

Bring the mixture to a boil, then add the mussels to the pot. Cover with a lid and steam for about 5-7 minutes, or until the mussels open up.

Serve

Remove from heat and discard any mussels that did not open. Serve the mussels in a bowl with the broth poured over them.
