Preheat the Oven

Preheat your oven to 375°F (190°C).

Prepare the Vegetables

Wash and chop the eggplant, zucchini, bell pepper, tomato, and onion into bite-sized pieces. Mince the garlic.

Mix Ingredients

In a large bowl, combine the chopped vegetables, minced garlic, olive oil, salt, black pepper, and dried oregano. Toss well to coat.

Layer the Vegetables

Spread the vegetable mixture evenly in a baking dish. Top with torn basil leaves.

Bake

Cover the baking dish with aluminum foil and bake in the preheated oven for 30 minutes. Remove the foil and bake for an additional 15-20 minutes, or until the vegetables are tender and slightly caramelized.

Remove from the oven and let cool for a few minutes before serving. Enjoy your baked vegetable ratatouille warm!
