Prepare the Tart Crust

In a medium bowl, combine flour, butter, granulated sugar, and salt. Mix until crumbly. Press the mixture into a tart pan and refrigerate for 30 minutes.

Bake the Tart Crust

Preheat the oven to 350°F (175°C). Bake the crust for 15-20 minutes or until lightly golden. Remove from oven and let cool.

Make the Lemon Filling

In a saucepan, whisk together egg yolks, lemon juice, lemon zest, granulated sugar, cornstarch, and water. Cook over medium heat until thickened, stirring constantly. Remove from heat and stir in butter until melted.

Fill the Tart

Pour the lemon filling into the cooled tart crust and spread evenly.

Make the Meringue

In a clean bowl, beat the egg whites until soft peaks form. Gradually add granulated sugar and continue to beat until stiff peaks form.

Top with Meringue

Spread the meringue over the lemon filling, making sure to seal the edges. Bake for 10-15 minutes at 350°F (175°C) until golden.

Prepare Raspberry Sauce

In a saucepan, combine raspberries, powdered sugar, and water. Cook over medium heat until berries break down. Strain to remove seeds if desired.

Slice the tart and serve with raspberry sauce drizzled on top.
