Prepare the Waffle Batter
In a large mixing bowl, whisk together the flour, baking powder, sugar, and salt.
Mix Together
Pour the wet ingredients into the dry ingredients and mix until just combined; do not overmix.
Cook the Waffles
Preheat your waffle iron and lightly grease it. Pour the batter into the iron and cook according to the manufacturer's instructions until golden brown.
Fried Chicken
Prepare the Chicken
In a bowl, mix together the flour, cornstarch, salt, pepper, paprika, and garlic powder.
Marinate the Chicken
Soak the chicken breasts in buttermilk for at least 30 minutes. This will tenderize the chicken.
Dredge the Chicken
Remove the chicken from the buttermilk and dredge it in the flour mixture, ensuring it's well-coated.
Fry the Chicken
Heat vegetable oil in a deep skillet over medium-high heat. Fry the chicken for about 6-8 minutes on each side or until golden brown and cooked through. Remove and drain on paper towels.
Bourbon Maple Syrup
Make the Syrup
In a small saucepan, combine maple syrup, bourbon, and bourbon smoked sugar. Heat over low heat until warmed and sugar is dissolved.
Assembly
Assemble the Dish
Place two waffles on a plate, top each with a fried chicken breast, and drizzle generously with the bourbon maple syrup.
Add Toppings
Top with sliced jalapenos and pickled onions for an extra kick and flavor.
