Prepare Churro Coating
Make Churro Mix
In a shallow bowl, mix together the granulated sugar, ground cinnamon, and salt until well combined. Set aside.
Prepare French Toast
Whisk Egg Mixture
In a large bowl, whisk together the eggs, milk, and vanilla extract until fully combined.
Soak Brioche Bread
Dip each slice of brioche bread into the egg mixture, allowing it to soak for a few seconds on each side.
Cook French Toast
In a large skillet, melt 1 tablespoon of butter over medium heat. Add soaked brioche slices and cook until golden brown, about 2-3 minutes per side. Repeat, adding more butter as needed.
Coat with Churro Mix
Once cooked, immediately coat each slice in the churro mixture until evenly covered.
Prepare Mixed Berry Compote
Cook Berries
In a small saucepan over medium heat, combine the mixed berries, granulated sugar, and lemon juice. Cook until the berries are soft and the mixture is bubbly, about 5-7 minutes. Remove from heat.
Serve
Plate and Garnish
Serve the churro French toast warm, topped with a generous spoonful of mixed berry compote, a dusting of powdered sugar, and a dollop of whipped cream.
