Build and shake

Fill a cocktail shaker with ice (about 3/4 full). Pour in the spiced rum, coconut rum, amaretto, orange juice, pineapple juice, and fresh lime juice (if using). Secure the lid and shake vigorously for 10–15 seconds until the shaker is cold to the touch and the mixture is well chilled.

Prepare glass

Fill a highball or Collins glass with fresh ice (crushed or cubes).

Strain and layer grenadine

Strain the shaken mixture into the prepared glass over the ice. Slowly pour the grenadine down the inside edge of the glass or over the back of a spoon so it sinks toward the bottom and creates a 'sunset' gradient.

Garnish & Serve

Garnish the rim of the glass with an orange wheel and drop a maraschino cherry into the drink. Optionally give the orange a light squeeze over the surface before dropping it in to add a touch of fresh aroma.

Serve immediately with a straw. For best presentation, don't stir — let the grenadine settle for the layered sunset effect; instruct the drinker to stir if they want a uniform flavor.
