Dough Preparation
Mix Dry Ingredients
In a large bowl, whisk together 2 cups of all-purpose flour, 1 tsp of baking powder, and 1 tsp of salt until well combined.
Add Shortening
Add 2 tablespoons of shortening or lard to the dry mixture and mix until the mixture resembles coarse crumbs.
Incorporate Water
Gradually add 3 tablespoons of warm water to the mixture, stirring until the dough begins to come together.
Knead Dough
Turn the dough out onto a lightly floured surface and knead for about 2-3 minutes until smooth and elastic.
Rest the Dough

Heat Oil
In a large pot or deep fryer, heat 4 cups of vegetable oil over medium-high heat until it reaches 350°F (175°C).

Divide the rested dough into small balls (about the size of a golf ball). Roll each ball out on a floured surface into a circle about 1/8 inch thick.
Fry Sopapillas
Carefully place the rolled dough into the hot oil. Fry until they puff up and turn golden brown, about 1-2 minutes on each side. Remove with a slotted spoon and drain on paper towels.
