Prepare the Ingredients

Gather all the ingredients. If using, slice the pickles into spears.

Warm the Sauerkraut

In a small saucepan over medium heat, warm the sauerkraut until heated through, about 5 minutes. Drain any excess liquid.

Assembly

Assemble the Sandwich

On two slices of Ozark natural bread, layer 4 oz of corned beef, half of the warm sauerkraut, two slices of Swiss cheese, and 2 tbs of Thousand Island dressing. Top with another slice of bread.

Repeat for Second Sandwich

Repeat the assembly process for the second sandwich.

Grill the Sandwiches

In a skillet over medium heat, melt 1 tbs of butter. Place the assembled sandwich in the skillet and grill until the bread is golden brown and the cheese is melted, about 3-4 minutes per side. Add more butter if needed.

Serve

Once cooked, remove sandwiches from the skillet, slice in half if desired, and serve with pickles on the side.
