Preparation

Preheat the Oven

Preheat your oven to 425°F (220°C). Grease four ramekins (6 oz) with butter and dust with cocoa powder to prevent sticking.

Melt Chocolate and Butter

In a medium heatproof bowl, combine the dark chocolate and unsalted butter. Melt them together using a double boiler or in the microwave in 30-second intervals, stirring until smooth. Allow to cool slightly.

Mix Dry Ingredients

In a separate bowl, whisk together the powdered sugar, all-purpose flour, and a pinch of salt.

Combine Mixtures

Once the chocolate mixture has cooled, add in the eggs, egg yolks, and vanilla extract. Whisk until fully combined. Gradually add the dry ingredient mixture to the wet ingredients, folding gently until just combined.

Baking

Fill Ramekins

Pour the batter evenly into the prepared ramekins, filling them about 2/3 full.

Bake

Place the ramekins on a baking sheet and bake in the preheated oven for 12-14 minutes, or until the edges are set but the center is still soft. Do not overbake.

Cool and Serve

Remove from the oven and let the lava cakes cool for 1 minute. Carefully invert each ramekin onto a plate. Serve immediately with a scoop of vanilla ice cream on top.
