Method
Preparing the Chicken
Marinate the Chicken
In a bowl, combine the olive oil, garlic powder, salt, and black pepper. Add the chicken breasts and coat them thoroughly. Let them marinate for at least 30 minutes.
Grill the Chicken
Preheat the grill to medium-high heat. Once hot, place the marinated chicken breasts on the grill. Cook for about 6-7 minutes per side, or until the internal temperature reaches 165°F (75°C). Remove from the grill and let rest for 5 minutes before slicing.
Preparing the Salad
Chop the Vegetables
While the chicken is grilling, wash and chop the mixed greens, cherry tomatoes, cucumber, and red onion into bite-sized pieces.
Combine Salad Ingredients
In a large bowl, combine the mixed greens, chopped cherry tomatoes, sliced cucumber, and thinly sliced red onion. Toss to mix well.
Making the Vinaigrette
Mix the Dressing
In a small bowl or jar, whisk together olive oil, balsamic vinegar, honey, Dijon mustard, salt, and black pepper until well combined. Adjust seasoning to taste.
Assembling the Salad
Combine Chicken and Salad
Slice the grilled chicken and add it on top of the salad mixture. Drizzle the vinaigrette over the salad.
Toss and Serve
Toss the salad gently to combine all ingredients and serve immediately.
