Prepare the Potatoes
Wash the Kennebec potatoes thoroughly under cold water. Peel them if desired, then cut them into evenly sized sticks, approximately 1/4 inch thick.
Dry the Potatoes
After soaking, drain the potatoes and pat them dry with a clean kitchen towel or paper towels to remove excess moisture.
Heat the Oil
In a large pot or deep fryer, heat the vegetable oil to 350°F (175°C). Use enough oil to fully submerge the fries.
Fry the Potatoes
Carefully add the dried potato sticks to the hot oil in batches, making sure not to overcrowd the pot. Fry for about 4-5 minutes, or until golden brown and crispy.
Drain and Season
Remove the fries from the oil using a slotted spoon and place them on a paper towel-lined plate to drain excess oil. While still hot, sprinkle with salt to taste.
Serve
Serve the fries hot with your favorite dipping sauce.
