Prepare the Dough
In a large mixing bowl, whisk together the flour, sugar, baking powder, and salt. In another bowl, beat the eggs and then mix in the milk and vanilla extract. Combine the wet ingredients with the dry ingredients until a smooth batter forms.
Heat the Oil
In a deep pot or fryer, heat the vegetable oil to 350°F (175°C). You can check the temperature with a thermometer or by dropping a small amount of batter into the oil; it should sizzle and float.
Fry the Zeppole
Using a spoon or small ice cream scoop, drop small amounts of batter into the hot oil. Fry in batches, making sure not to overcrowd the pot. Cook until golden brown, about 2-3 minutes per side. Remove with a slotted spoon and drain on paper towels.
Toss in Cinnamon Sugar
In a shallow bowl, combine sugar and cinnamon to taste. While the zeppole are still warm, toss them in the cinnamon sugar mixture until well coated.
