Prepare the Ingredients

Chop the bell peppers, dice the onion, and mince the garlic. Slice the chorizo and blackened chicken.

Cook the Chorizo

In a large pan or paella pan, heat the olive oil over medium heat. Add the chorizo and cook until browned, about 3-4 minutes. Remove and set aside.

Sauté Vegetables

In the same pan, add the onion and garlic. Sauté until the onion becomes translucent. Add the bell peppers and continue to cook for another 5 minutes.

Add Rice and Spices

Stir in the saffron rice, paprika, salt, and black pepper. Cook for 2 minutes, ensuring the rice is well-coated with oil and spices.

Add Broth

Pour in the chicken broth and bring to a simmer. Let it cook uncovered for about 10 minutes.

Add Seafood and Chicken

Arrange the halibut, salmon, mussels, prawns, and blackened chicken on top of the rice. Cover the pan and cook for an additional 10-12 minutes, or until the seafood is cooked through and the mussels have opened.

Final Touches

Once cooked, remove from heat. Sprinkle Grana Padano cheese and chopped green onions on top before serving.
