Preparation of Grilled Chicken

Marinate the Chicken

In a bowl, mix olive oil, garlic powder, paprika, salt, black pepper, and lemon juice. Add the chicken breasts and coat well. Let it marinate for at least 30 minutes.

Grill the Chicken

Preheat the grill to medium-high heat. Grill the marinated chicken for about 6-7 minutes on each side or until fully cooked and the internal temperature reaches 165°F (75°C).

Cook Quinoa

Rinse the quinoa under cold water. In a saucepan, combine quinoa and vegetable broth. Bring to a boil, then reduce heat and simmer for 15 minutes until the quinoa is fluffy and the liquid is absorbed. Remove from heat and let it cool.

Prepare Vegetables

Chop cherry tomatoes, cucumber, and red onion into small pieces. In a large mixing bowl, combine the cooled quinoa, chopped vegetables, feta cheese, and parsley.

Dress the Salad

Drizzle balsamic vinegar over the quinoa salad and toss gently to combine. Adjust seasoning with salt and pepper to taste.

On a serving platter, place a portion of the quinoa salad and top it with a grilled chicken breast. Garnish with additional parsley if desired.
