Preparation
Marinate the Chicken
In a bowl, combine the buttermilk, paprika, garlic powder, onion powder, salt, and black pepper. Add the chicken thighs, ensuring they are fully submerged. Cover and refrigerate for at least 1 hour (or overnight for best results).
Prepare the Coating
In a separate bowl, mix together the flour and cornstarch. Season with additional salt and pepper if desired.
Heat the Oil
In a large skillet or deep fryer, heat vegetable oil over medium-high heat until it reaches 350°F (175°C).
Fry the Chicken
Remove the chicken from the buttermilk marinade, allowing excess to drip off. Dredge each piece in the flour mixture, pressing lightly to adhere. Fry the chicken in batches until golden brown and cooked through, about 5-7 minutes per side. Drain on paper towels.
Assemble the Sliders
On each slider bun, spread mayonnaise, add a piece of fried chicken, a lettuce leaf, and a slice of tomato. Top with the other half of the bun.
Serve
Serve the sliders warm with your choice of sides.
