Muddle Mint and Sugar
In a sturdy glass or cocktail shaker, add the fresh mint leaves and granulated sugar. Use a muddler or the back of a spoon to gently crush the mint leaves to release their oils, mixing them with the sugar.
Add Lime Juice and Pisco
Pour the fresh lime juice and Pisco into the glass or shaker with the muddled mint and sugar. Stir gently to combine the ingredients.
Strain and Serve
If you used a shaker, strain the mixture into a highball glass filled with fresh ice. If you mixed in a glass, you can serve it directly.
Top with Club Soda
Slowly pour the club soda over the drink, allowing it to mix gently with the Pisco mixture without stirring too vigorously.
Add Bitters
Add two dashes of bitters on top of the drink for an aromatic finish.
Garnish and Enjoy
Garnish with a sprig of fresh mint, and serve immediately. Enjoy your El Peruano!
