Preparing the Mojo Aioli

Make the Mojo Aioli

In a mixing bowl, combine the mayonnaise, minced garlic, fresh orange juice, lime juice, cumin powder, salt, and black pepper. Whisk together until smooth and well combined. Adjust seasoning to taste.

Assembling the Sandwich

Prepare the Bread

Slice the Cuban bread in half lengthwise to create a top and bottom for the sandwich.

Layer the Ingredients

Spread a generous amount of the mojo aioli on both sides of the bread. Layer the sliced roast pork on the bottom half of the bread.

Add Toppings

Top the roast pork with orange segments, sliced red onion, and chopped cilantro. Place the top half of the bread over the toppings.

Serve

Press down gently on the sandwich, slice into portions if desired, and serve immediately with extra mojo aioli on the side.
