Method
Fruit Filling Preparation
Prepare Passion Fruit
Cut each passion fruit in half and scoop out the pulp and seeds into a bowl. You should have about 1 cup of pulp.
Thicken the Mixture
In a small bowl, mix the cornstarch with a little cold water to create a slurry. Once the passion fruit mixture is simmering, gradually whisk in the cornstarch slurry. Continue to cook until the mixture thickens, about 2-3 minutes.
Finish Filling
Remove from heat and stir in the butter until melted and combined. Set aside to cool slightly.
Crust Preparation
Prepare Crust
Preheat the oven to 350°F (175°C). In a mixing bowl, combine graham cracker crumbs, sugar, and salt.
Add Butter
Melt the butter and pour it into the crumb mixture. Stir until the crumbs are evenly coated and the mixture resembles wet sand.
Form the Crust
Press the mixture firmly into the bottom and up the sides of a 9-inch pie pan to create an even layer.
Bake Crust
Bake the crust in the preheated oven for 10 minutes. Remove from oven and let cool slightly.
Assembly
Combine Filling and Crust
Once the filling has cooled slightly and the crust is ready, pour the passion fruit filling into the cooled crust. Spread evenly.
Chill
Refrigerate the pie for at least 2 hours, or until set.
Serve
Slice the pie and serve chilled. Enjoy the refreshing taste of passion fruit!
