Prepare Passion Fruit

Cut each passion fruit in half and scoop out the pulp and seeds into a bowl. You should have about 1 cup of pulp.

In a medium saucepan, combine the passion fruit pulp, sugar, water, and lemon juice. Bring to a gentle simmer over medium heat.

Thicken the Mixture

In a small bowl, mix the cornstarch with a little cold water to create a slurry. Once the passion fruit mixture is simmering, gradually whisk in the cornstarch slurry. Continue to cook until the mixture thickens, about 2-3 minutes.

Remove from heat and stir in the butter until melted and combined. Set aside to cool slightly.

Preheat the oven to 350°F (175°C). In a mixing bowl, combine graham cracker crumbs, sugar, and salt.
