Dough Preparation
Mix Dry Ingredients
In a large bowl, whisk together the all-purpose flour, baking powder, and salt until well combined.
Add Shortening
Add the vegetable shortening to the dry ingredients and use your fingers or a pastry cutter to mix until the mixture resembles coarse crumbs.
Incorporate Water
Gradually add the warm water to the mixture, stirring until a soft dough forms. If the dough is too sticky, you may add a little more flour.
Knead the Dough
Turn the dough onto a floured surface and knead for about 5 minutes until smooth and elastic. Cover with a clean kitchen towel and let it rest for at least 30 minutes.
Frying
Heat Oil
In a large, heavy-bottomed pot, heat the vegetable oil over medium-high heat. The oil should reach a temperature of about 375°F (190°C).
Roll Out Dough
Once the dough has rested, divide it into 2 equal pieces. Roll out each piece on a floured surface to about 1/8 inch thick. Cut into squares or triangles, about 2-3 inches in size.
Fry the Sopapillas
Carefully place a few pieces of dough into the hot oil, making sure not to overcrowd the pot. Fry for about 2-3 minutes on each side or until they puff up and turn golden brown.
Drain and Cool
Using a slotted spoon, remove the sopapillas from the oil and place them on a paper towel-lined plate to drain any excess oil. Repeat with the remaining dough.
