Prepare the Sauce

In a large pot, heat olive oil over medium heat. Add chopped onion and sauté until translucent, about 5 minutes.

Add Garlic

Stir in minced garlic and cook for an additional 1-2 minutes until fragrant.

Brown the Sausage

Add the house-made sausage to the pot and cook until browned. Break it apart with a spoon as it cooks.

Brown the Beef

Add the Painted Hills beef to the pot, browning on all sides, about 3-4 minutes. Remove the beef and set aside.

Add Tomatoes and Simmer

Pour in the diced Roma tomatoes, along with their juices. Stir in oregano, basil, salt, and pepper. Bring to a simmer.

Return the Beef to the Pot

Add the browned beef back to the pot, cover, and let simmer on low heat for 2-3 hours. Stir occasionally.

Cook the Penne Pasta

About 15 minutes before serving, cook the penne pasta according to package instructions in a large pot of salted boiling water.

Combine Pasta and Sauce

Once the pasta is cooked and drained, add it to the sauce. Toss well to coat the pasta in the sauce.

Serve

Serve the pasta hot, garnished with grated Parmesan cheese and fresh basil.
