Soak the Black Beans

Rinse the black beans under cold water. In a large bowl, cover the beans with water and let them soak overnight or for at least 6 hours.

Chop Vegetables

Dice the onion and mince the garlic. Set aside.

Cooking

Cook Beans

Drain the soaked black beans and add them to a large pot. Pour in 3 cups of fresh water and add the bay leaf. Bring to a boil, then reduce the heat to low, cover, and simmer for about 1.5 to 2 hours, or until the beans are tender.

Sauté Vegetables

In a separate pan, heat the olive oil over medium heat. Add the diced onion and sauté for about 5 minutes, or until they are translucent. Add the minced garlic and cumin, and cook for another 1-2 minutes until fragrant.

Combine and Season

Once the beans are tender, add the sautéed onion and garlic mixture to the pot with the beans. Stir well, and season with salt and black pepper to taste. Continue to simmer for another 10 minutes to allow the flavors to meld.

Finish and Serve

Remove the bay leaf and squeeze the juice of one lime into the pot. Stir well and adjust seasoning if needed. Serve warm, garnished with cilantro, avocado slices, and a dollop of sour cream if desired.
