Method
Prepare the Lobster
Cook the Lobster Tails
Preheat your grill or oven broiler. Cut the top shell of the lobster tails down the center with kitchen scissors, exposing the meat. Brush the meat with melted butter and season with salt and black pepper. Grill or broil for about 8-10 minutes until the meat is opaque and cooked through.
Chill the Lobster Tails
Once cooked, remove the lobster tails from the heat and let them cool. Place them in the refrigerator to chill for at least 30 minutes.
Make the Salsa
Prepare the Salsa
In a bowl, combine the sakura herbs, Dijon mustard, olive oil, white wine vinegar, and honey. Mix well. Season with salt and black pepper to taste.
Serve
Plate the Dish
Once the lobster tails are chilled, place them on a serving platter. Top each lobster tail with the sakura herb mustard salsa. Serve with lemon wedges on the side.
