Mousse Preparation

Prepare the gelatin

In a small bowl, combine the gelatin powder and water. Let it sit for about 5 minutes until it blooms.

Infuse the cream

In a saucepan, heat the heavy cream and lime leaves over medium heat until it just begins to simmer. Remove from heat and let the leaves steep for about 10 minutes.

Melt the chocolate

Meanwhile, place the white chocolate in a heatproof bowl. Strain the cream to remove the lime leaves, then pour it over the chocolate. Stir until melted and smooth.

Combine gelatin

Reheat the cream mixture slightly if needed, then add the bloomed gelatin and stir until completely dissolved. Mix in the lime juice and vanilla extract.

Fold in whipped cream

In a separate bowl, whip the remaining heavy cream and sugar to soft peaks. Gently fold the whipped cream into the chocolate mixture until fully combined.

Chill the mousse

Spoon the mousse mixture into serving dishes and refrigerate for at least 2 hours or until set.

Serve

Once set, garnish with lime zest or mint leaves if desired, and serve chilled.
