In a large bowl, whisk together the flour, sugar, baking powder, and salt.

In another bowl, whisk together the eggs, milk, and vanilla extract until well combined.

Pour the wet ingredients into the dry ingredients and mix until just combined. Do not overmix; some lumps are okay.

In a deep pot, heat the vegetable oil over medium heat until it reaches 350°F (175°C).

Fry the Donuts

Using a spoon or a small ice cream scoop, carefully drop spoonfuls of the batter into the hot oil. Fry until they are golden brown on both sides, about 2-3 minutes per side.

Drain and Cool

Remove the bolinhos with a slotted spoon and place them on a plate lined with paper towels to drain excess oil.

In a shallow bowl, mix together the sugar and cinnamon.
