Prepare the Filling

In a large mixing bowl, combine the shredded cooked chicken, refried beans, half of the shredded cheese, chopped cilantro, salt, and ground black pepper. Mix well until all ingredients are evenly incorporated.

Assemble the Enchiladas

Preheat your oven to 350°F (175°C). Take a flour tortilla and spread a generous amount of the filling mixture along the center. Roll the tortilla tightly around the filling and place the seam side down in a greased baking dish. Repeat this process with the remaining tortillas and filling.

Add Sauce and Cheese

Once all enchiladas are in the baking dish, pour the enchilada sauce evenly over the top. Sprinkle the remaining shredded cheese over the sauce.

Bake

Cover the baking dish with aluminum foil and bake in the preheated oven for 20 minutes. Then, remove the foil and bake for an additional 10 minutes, or until the cheese is melted and bubbly.

Serve

Remove from the oven and let cool for a few minutes. Serve the enchiladas hot, topped with sour cream and chopped green onions.
