Method
Cheese Enchiladas
Assemble Enchiladas
In a bowl, mix the sautéed onion and garlic with 1 cup of shredded cheese. Take a corn tortilla, place 2 tablespoons of the cheese mixture in the center, roll it up, and place seam-side down in a baking dish. Repeat until all tortillas are filled.
Add Sauce
Pour the red enchilada sauce over the rolled tortillas in the baking dish, ensuring they are well covered. Sprinkle the remaining cheese on top.
Bake
Preheat the oven to 375°F (190°C) and bake the enchiladas for 20-25 minutes or until the cheese is bubbly and golden.
Beef Tacos
Cook Ground Beef
In a skillet over medium heat, add the ground beef and cook until browned, breaking it apart with a spatula.
Add Seasoning
Stir in the taco seasoning mix and water. Simmer for about 5 minutes until the mixture thickens.
Prepare Taco Shells
While the beef is cooking, prepare taco shells according to package directions.
Assemble Tacos
Fill each taco shell with the seasoned beef, then top with shredded lettuce, diced tomato, shredded cheddar cheese, and a dollop of sour cream.

Cook the Rice
In a pot, bring the chicken or vegetable broth to a boil. Add the rice, cover, and reduce heat to low. Simmer for about 15-20 minutes or until rice is cooked.
Mix in Beans
Once the rice is cooked, stir in the drained black beans, chopped cilantro, lime juice, salt, and pepper. Mix well and let it heat through for an additional 5 minutes.
