Method
Cheese Enchiladas
Prepare the Filling
In a skillet, heat olive oil over medium heat. Add chopped onion and minced garlic cloves, sauté until onions are translucent.
Add Spices
Stir in ground cumin and salt; cook for another minute.
Assemble Enchiladas
In a baking dish, pour a little enchilada sauce to coat the bottom. Dip each tortilla in the enchilada sauce, fill with a mixture of cheddar and Monterey Jack cheese, roll up, and place seam side down in the baking dish.
Top with Sauce and Cheese
Pour remaining enchilada sauce over the rolled tortillas and sprinkle with remaining cheese.
Bake
Bake in a preheated oven at 350°F (175°C) for 20-25 minutes until cheese is bubbly.
Beef Tacos
Cook the Beef
In a skillet over medium heat, brown the ground beef until no longer pink. Drain excess fat.
Season the Beef
Add taco seasoning and water to the skillet, stir to combine. Simmer for 5-7 minutes until thickened.
Assemble Tacos
Warm taco shells according to package instructions. Fill each shell with beef mixture, then top with lettuce, tomatoes, sour cream, and cheese as desired.
