Preparation of Meat

Prepare the Meat

Trim excess fat from the beef chuck roast or chicken thighs. Cut the meat into large chunks for even cooking.

Sear the Meat

In a large pot or Dutch oven, heat a tablespoon of oil over medium-high heat. Add the meat chunks and sear on all sides until browned. Remove from pot and set aside.

Prepare the Chiles

Remove stems and seeds from dried chiles. Rinse them under cold water to clean.

Soak the Chiles

In a bowl, soak the cleaned chiles in hot water for about 15 minutes until softened.

Blend the Sauce

In a blender, combine soaked chiles, garlic cloves, onion, cumin, oregano, and salt. Add a cup of soaking liquid and blend until smooth.

Cooking

Combine Ingredients

Return the seared meat to the pot. Pour the blended chile sauce over the meat, and add the remaining water or broth.

Simmer

Bring the mixture to a boil, then reduce the heat to low. Cover and let simmer for 2 to 3 hours, or until the meat is tender and easily shreds.

Shred the Meat

Once cooked, remove the meat from the pot and shred it using two forks. Return the shredded meat to the pot and stir to combine with the sauce.
