Prepare the Spinach Mixture

In a large skillet, heat the olive oil over medium heat. Add minced garlic and sauté for 1 minute until fragrant.

Add Spinach

Add the fresh spinach to the skillet and cook, stirring occasionally, until wilted, about 2-3 minutes.

Mix in Cream Cheese

Reduce the heat to low and add cream cheese, salt, and black pepper. Stir until the cream cheese has melted and the mixture is well combined. Remove from heat.

Assemble the Quesadillas

Heat a separate skillet or griddle over medium heat. Place one tortilla in the skillet and spread a portion of the spinach mixture on one half of the tortilla. Sprinkle shredded cheese on top.

Cook the Quesadilla

Fold the tortilla over to cover the filling. Cook for 2-3 minutes on each side until golden brown and the cheese is melted.

Repeat

Repeat the process with the remaining tortillas and filling.

Serve

Cut the quesadillas into wedges and serve warm with salsa or sour cream if desired.
