Prepare the Ingredients
Gather all the ingredients listed above. Rinse the canned black beans under cold water and drain them.
Cook the Rice
If you haven't already, cook rice according to package instructions. This usually takes about 15-20 minutes.
Chop the Vegetables
Chop the lettuce and dice the medium tomato. You can also add onions, jalapeños, or any other preferred toppings.
Heat the Beans
In a small saucepan, heat the black beans over medium heat. Add olive oil, salt, and black pepper. Stir occasionally until warmed through, about 5-7 minutes.
Assemble the Burro Grande
Lay the large flour tortilla on a flat surface. In the center, start layering with cooked rice, warmed black beans, guacamole, lettuce, diced tomatoes, shredded cheese, and pico de gallo.
Wrap the Burro
Fold the sides of the tortilla inward and then roll it up tightly from the bottom to the top, creating a burrito shape.
Serve
Cut the burro in half if desired, and serve with extra pico de gallo or guacamole on the side.
