Method
Cocktail
Combine spirits and modifiers
Add 2 oz añejo tequila, 0.5 oz reposado tequila, 0.5 oz orange curaçao, and 0.5 oz aged rum into a mixing glass.
Add citrus, sweetener and bitters
Measure and add 0.5 oz fresh lime juice and 0.5 oz demerara syrup to the mixing glass. Add 2 dashes Angostura bitters and 1 dash orange bitters.
Stir
Fill the mixing glass with plenty of ice. Stir gently but thoroughly for about 20–30 seconds (roughly 20–30 full rotations) until the mixture is well-chilled and properly diluted (about 15–20% dilution).
Prepare glass
Place a large ice sphere or a large clear ice cube in an old-fashioned / rocks glass.
Garnish & Finish
Express the oils of the orange peel over the surface of the cocktail by holding the peel skin-side down 2–3 inches above the glass and giving it a firm squeeze so the spray lands on the drink. Optionally run the peel around the glass rim and drop it into the drink. Add a lime wheel on the rim if desired.
Serve immediately, with a short straw or stirring pick. Encourage sipping to appreciate the layered aged spirits and subtle citrus/bitters interplay.
