Wash the Spinach

Thoroughly rinse the fresh spinach leaves under cold running water to remove any dirt or grit. Drain well.

Chop the Garlic

Peel and finely chop the garlic cloves. Set aside.

Heat the Olive Oil

In a large skillet, heat the olive oil over medium heat until it shimmers.

Sauté the Garlic

Add the chopped garlic to the skillet and sauté for about 1 minute, stirring frequently, until fragrant but not browned.

Add the Spinach

Gradually add the washed spinach to the skillet, tossing it with the garlic and oil. It may seem like a lot at first, but it will wilt down.

Season and Cook

Sprinkle in the salt and black pepper. Continue to sauté the spinach for about 3-5 minutes, or until it is wilted and tender.

Finish with Lemon Juice

Remove the skillet from heat and drizzle the lemon juice over the sautéed spinach. Toss to combine and adjust seasoning if necessary.
