Prepare the Jalapeños

Wash the jalapeños thoroughly. Slice them into rings, leaving the seeds intact for extra heat.

Make the Pickling Brine

In a medium saucepan, combine the bourbon, white vinegar, sugar, salt, garlic, black peppercorns, mustard seeds, coriander seeds, and bay leaves. Bring to a boil over medium heat, stirring until the sugar and salt dissolve.

Combine and Simmer

Once the brine is boiling, add the sliced jalapeños to the saucepan. Reduce the heat and let it simmer for about 5-10 minutes.

Cool and Jar

Remove the saucepan from heat and let the mixture cool slightly. Then transfer the jalapeños and brine into sterilized jars. Seal tightly.

Refrigerate

Allow the jars to cool completely before refrigerating. The jalapeños can be enjoyed after a day, but they are best after 1-2 weeks of pickling.
