Prepare the Breakfast Potatoes

Wash and dice the potatoes into small cubes. Heat olive oil in a pan over medium heat. Add the diced potatoes, paprika, and salt. Cook for about 15-20 minutes, stirring occasionally, until golden brown and tender.

Cook the Pork

In a separate pan, add ground pork, garlic powder, cumin, and salt. Cook over medium heat for about 8-10 minutes, breaking the pork apart with a spatula until fully cooked.

Make Salsa Roja

Blend together tomatoes, jalapeño, onion, cilantro, and lime juice in a blender until smooth. Adjust seasoning if needed.

Scramble the Eggs

In a bowl, whisk together the eggs, salt, and pepper. In a non-stick skillet, melt the butter over medium heat. Pour in the egg mixture and gently scramble until cooked through but still soft.

Assemble the Burrito Suizo

On a large flour tortilla, layer the scrambled eggs, cooked pork, breakfast potatoes, a spoonful of black beans, and salsa roja. Sprinkle a generous amount of melted Chihuahua cheese on top.

Melt the Cheese

Place the assembled burrito in a pan over low heat, cover with a lid, and let the cheese melt for about 2-3 minutes.

Serve

Carefully remove the burrito from the pan, slice in half if desired, and serve with extra salsa roja on the side.
