In a large mixing bowl, whisk together the flour, baking powder, and salt until combined.

Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix; some lumps are okay.

Make Almond Mascarpone

In a small bowl, mix the mascarpone cheese, almond extract, and powdered sugar together until smooth and creamy.

Oatmeal Crumble

Prepare Oatmeal Crumble

In a separate bowl, mix the rolled oats, brown sugar, melted butter, and cinnamon until crumbly.

Bake the Crumble

Spread the crumble mixture on a baking sheet lined with parchment paper and bake at 350°F (175°C) for 10-12 minutes until golden brown, stirring halfway through.

Cooking Pancakes

Preheat the Cast Iron Skillet

Place a cast iron skillet over medium heat and add a small amount of butter to grease the surface.

Pour about 1/4 cup of batter into the skillet for each pancake. Cook until bubbles form on the surface, about 3-4 minutes, then flip and cook for an additional 2-3 minutes until golden brown.

Layer pancakes on a plate, top with almond mascarpone, sprinkle with oatmeal crumble, and add a generous amount of mixed berries on top. Serve immediately.
