Prepare the Chicken or Eggplant

If using chicken, slice the breast into 1-inch thick fillets. If using eggplant, slice into 1/2-inch thick rounds. Season both sides with salt and black pepper.

Set Up Breading Station

In one bowl, place the flour. In a second bowl, beat the eggs. In a third bowl, place the breadcrumbs. Dip each piece of chicken or eggplant first in the flour, then in the egg, and finally in the breadcrumbs, ensuring an even coating.

Fry the Breaded Pieces

Heat olive oil in a skillet over medium-high heat. Add the breaded chicken or eggplant pieces and fry for about 3-4 minutes on each side or until golden brown. Remove and drain on paper towels.

Bake with Marinara and Mushrooms

Preheat your oven to 375°F (190°C). In a baking dish, spread half of the marinara sauce on the bottom. Place the fried chicken or eggplant on top, then add the sliced mushrooms and the remaining marinara sauce over them. Finally, sprinkle shredded mozzarella cheese on top.

Bake in the preheated oven for 20-25 minutes or until the cheese is melted and bubbly.
