Method
Preparation
Cut the Potatoes
Wash the Russet potatoes thoroughly and cut them into thin strips (about 1/4 inch thick).
Soak the Fries
Place the cut fries in a bowl of cold water and let them soak for at least 30 minutes to remove excess starch.
Dry the Fries
After soaking, drain the fries and pat them dry with a clean towel to remove moisture.
Cooking
Heat the Oil
In a large pot or deep fryer, heat the vegetable oil to 350°F (175°C).
Fry the Potatoes
Carefully add a batch of fries to the hot oil, frying in small batches for about 4-5 minutes until golden brown. Remove with a slotted spoon and drain on paper towels.
Season the Fries
While the fries are still hot, sprinkle with salt and pepper to taste.
Serving
Serve with Dips
Serve the fries warm in a basket with a selection of dips on the side such as ketchup, mayonnaise, ranch dressing, and garlic aioli.
